Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 small box (3.4 oz) instant vanilla pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup pistachios, chopped

Steps:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Add the pudding mix, eggs, and vanilla extract. Mix until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, stirring until fully combined.
- Fold in the chocolate chips and chopped pistachios.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden and the center is set. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
