Creamy Tuscan Chicken 🍗

Ingredients:

2 large chicken breasts, sliced in half
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp paprika
2 tbsp olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
2 cups fresh spinach
1 cup heavy cream
½ cup chicken broth
½ cup Parmesan cheese, grated
1 tsp Italian seasoning
2 tbsp butter

Directions:

1️⃣ Season the chicken with salt, black pepper, garlic powder, and paprika.


2️⃣ Heat olive oil in a large skillet over medium heat. Sear chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.


3️⃣ In the same pan, melt butter and sauté garlic for 1 minute.


4️⃣ Add cherry tomatoes and cook for 2-3 minutes until softened.


5️⃣ Pour in chicken broth and let it simmer for 2 minutes, scraping up any bits from the pan.


6️⃣ Stir in heavy cream, Parmesan cheese, and Italian seasoning. Cook for 2 minutes until the sauce thickens.


7️⃣ Add spinach and let it wilt for 1 minute.


8️⃣ Return the chicken to the pan, spooning the sauce over it. Simmer for 2 more minutes.


9️⃣ Serve hot with pasta, rice, or veggies. Enjoy!
