Chicken Couscous Soup

🛒 Ingredients:

2 cups (300 g) cooked chicken, shredded or diced
1 cup (175 g) pearl couscous
3 medium carrots (200 g), peeled and sliced
1 small onion (100 g), finely diced
2 cloves garlic, minced
5 cups (1.2 liters) chicken broth
1 tbsp (15 ml) olive oil
1 tsp (5 g) dried parsley
1/2 tsp (2 g) ground turmeric (optional, for color and flavor)
Salt and black pepper, to taste

📋 Directions:

Sauté Vegetables:
Heat olive oil in a large pot over medium heat. Add the onion, garlic, and carrots. Sauté for 5–6 minutes until the vegetables begin to soften.
Add Spices and Broth:
Sprinkle the dried parsley, turmeric, salt, and black pepper into the pot. Pour in the chicken broth and bring to a boil.
Cook the Couscous:
Stir in the pearl couscous. Reduce the heat to medium-low and simmer for 8–10 minutes, stirring occasionally, until the couscous is tender.
Incorporate the Chicken:
Add the cooked shredded chicken to the pot and simmer for an additional 5 minutes to warm it through.
Adjust Seasoning:
Taste and adjust the soup with more salt or pepper if needed.
Serve and Enjoy:
Ladle the soup into bowls, garnish with freshly ground black pepper, and serve warm.
