Herb-Roasted Salmon with Veggies ππ
ingredients:
- 2 salmon fillets (about 6 oz each)
- 2 cups baby potatoes, halved
- 1 cup cherry tomatoes
- 1 cup broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges for serving

directions:
- preheat your oven to 400Β°F (200Β°C).
- in a large bowl, toss the baby potatoes, cherry tomatoes, and broccoli with 1 tablespoon of olive oil, garlic powder, oregano, paprika, salt, and pepper. spread evenly on a baking sheet.
- rub the salmon fillets with the remaining olive oil and season with salt, pepper, and a sprinkle of paprika. place them on the same baking sheet with the vegetables.
- roast in the oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender.
- garnish with fresh parsley and serve warm with lemon wedges.
