Ingredients:
- 2 cups shredded coconut (unsweetened)
- 1/2 cup coconut milk
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 1/2 cups dark chocolate (melted)
- 2 tbsp coconut oil

Steps:
- In a bowl, mix shredded coconut, coconut milk, maple syrup, vanilla, and salt until well combined.
- Press the mixture into a lined loaf pan, smoothing the top.
- Chill in the freezer for 30 minutes until firm.
- Melt dark chocolate with coconut oil until smooth.
- Pour melted chocolate over the coconut base, spreading evenly.
- Return to the fridge for 1 hour or until set.
- Slice and enjoy!
