Grilled Chicken & Avocado Bowl 🥑🍗
A fresh and protein-packed bowl featuring juicy grilled chicken, creamy avocado, crisp salad, and a side of refreshing yogurt sauce!
Ingredients
For the Grilled Chicken:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
Juice of ½ lemon

For the Bowl:
1 cup cooked white or brown rice
1 ripe avocado, sliced
½ cup cherry tomatoes, halved
1 cup lettuce, chopped
1 tablespoon fresh parsley, chopped
For the Yogurt Sauce:
½ cup Greek yogurt
1 teaspoon lemon juice
1 clove garlic, minced
1 teaspoon olive oil
Salt & pepper to taste
Directions
1️⃣ Marinate the Chicken:
In a bowl, mix olive oil, garlic powder, smoked paprika, oregano, salt, pepper, and lemon juice.
Coat chicken breasts with the marinade and let sit for 15 minutes.
2️⃣ Grill the Chicken:
Heat a grill pan or skillet over medium heat.
Cook chicken for 5-6 minutes per side until golden brown and fully cooked (internal temp: 165°F/75°C).
Let rest for a few minutes before slicing.
3️⃣ Prepare the Yogurt Sauce:
Mix Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper in a small bowl.
Stir until smooth.
4️⃣ Assemble the Bowl:
Place cooked rice as the base.
Arrange sliced grilled chicken, avocado, cherry tomatoes, and lettuce on top.
5️⃣ Drizzle & Serve:
Garnish with fresh parsley and serve with yogurt sauce on the side.
