Pecan Pie Cookies 🍪😋

Ingredients:

For the cookie dough:
1/2 cup unsalted butter, softened
1/3 cup brown sugar
1 egg yolk
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/4 teaspoon salt

For the pecan filling:
1/2 cup chopped pecans
1/4 cup brown sugar
2 tablespoons heavy cream
1/2 teaspoon vanilla extract
1 tablespoon unsalted butter

Directions:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, beat butter and brown sugar until fluffy. Add egg yolk and vanilla, mixing until combined.
Stir in flour and salt until a soft dough forms. Chill for 15 minutes.
Roll dough into 1-inch balls, place on the baking sheet, and make an indent in the center of each using your thumb.
In a small saucepan, combine pecans, brown sugar, heavy cream, vanilla, and butter. Cook over medium heat until thickened, about 2 minutes.
Spoon a small amount of the pecan mixture into each cookie indentation.
Bake for 10-12 minutes or until golden brown. Let cool before serving.
