Oreo Mini Cheesecakes

Ingredients:

18 Oreo cookies (12 whole, 6 crushed)
8 oz (225g) cream cheese, softened
1/4 cup (50g) granulated sugar
1/2 tsp vanilla extract
1 large egg
1/4 cup (60g) sour cream
1/8 tsp salt
Whipped cream (optional, for topping)
Additional crushed Oreos for garnish

Instructions:

Preheat oven to 325°F (163°C). Line a 12-cup muffin tin with cupcake liners.
Place one whole Oreo at the bottom of each liner.
In a mixing bowl, beat cream cheese and sugar until smooth.
Add vanilla extract, egg, sour cream, and salt, and mix until combined.

Fold in the crushed Oreos gently.

Spoon the cheesecake mixture evenly over the Oreo bases in the muffin tin.
Bake for 15-18 minutes, or until the center is just set.
Let cool to room temperature, then refrigerate for at least 2 hours (or overnight for best results).
Top with whipped cream and crushed Oreos before serving.
