Creamy Mushroom Chicken and Wild Rice Soup 🍲
Ingredients:
2 tbsp butter
1 lb mushrooms, sliced
1 tbsp butter
1 onion, diced
2 carrots, diced
2 stalks celery, diced
2 cloves garlic, chopped
1 tsp thyme, chopped
6 cups chicken broth
1 cup wild rice (or blend with wild rice)
1½ cups chicken, cooked and diced/shredded
1 cup milk or cream
1 cup parmesan, grated
Salt and pepper to taste

Instructions:
Melt butter in a pan over medium-high heat, cook mushrooms until liquids evaporate (10-15 mins).
Melt more butter in the pan, cook onions, carrots, and celery until tender (8-10 mins).
Add garlic and thyme, cook until fragrant (1 min).
Add broth, rice, chicken, and mushrooms. Bring to boil, reduce heat, and simmer until rice is tender (20-30 mins).
Mix in milk and cheese, cook until cheese melts. Season with salt and pepper.
