Life-Changing Lemon Butter Salmon with Crispy Potatoes & Broccoli 🍋🐟
Ingredients:
For the salmon:
- 4 salmon fillets (6 oz each)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
For the sauce: - 3 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1/2 cup heavy cream
- 1/4 cup chicken or vegetable broth
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh parsley, chopped
For the sides: - 1 lb baby potatoes, halved
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Directions:

- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss baby potatoes with olive oil, garlic powder, salt, and pepper. Spread them on half of the baking sheet and roast for 15 minutes.
- Add broccoli to the other half of the baking sheet, drizzle with olive oil, season with salt and pepper, and roast for an additional 15 minutes.
- Meanwhile, season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat. Sear the salmon for 3-4 minutes on each side until golden. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant. Add cream, broth, lemon juice, and zest. Simmer for 3-4 minutes until slightly thickened. Stir in parsley.
- Return the salmon to the skillet, spooning the sauce over the fillets. Simmer for 2 minutes.
- Serve the salmon with roasted potatoes, broccoli, and a generous drizzle of the lemon butter sauce.
