Heavenly Raspberry White Chocolate Mousse Parfait
Ingredients:
1 cup fresh raspberries
1 cup white chocolate chips
1 cup heavy cream
1/2 cup mascarpone cheese, softened
2 tbsp powdered sugar (or to taste)
1 tsp vanilla extract
1/2 cup graham cracker crumbs (optional for layers)
Fresh raspberries and mint leaves for garnish

Directions:
Melt the white chocolate chips in a heatproof bowl over simmering water, stirring constantly until smooth. Let it cool slightly.
In a mixing bowl, whip the heavy cream until stiff peaks form.
In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold the melted white chocolate into the mascarpone mixture. Then, fold in the whipped cream until the mousse is light and fluffy.
In serving glasses or bowls, layer the mousse, fresh raspberries, and optional graham cracker crumbs.
Repeat the layers until the glasses are filled.
Garnish with fresh raspberries and mint leaves for a beautiful finish.
Serve immediately or refrigerate for at least an hour to allow the flavors to meld together.
