Greek Chicken Gyros

Authentic Greek Chicken Gyros with Tzatziki Sauce

Ingredients:

1 lb (450g) boneless, skinless chicken thighs
2 tablespoons olive oil
2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
4 pita breads
1 cup lettuce, shredded
1 tomato, diced
1/2 red onion, thinly sliced
1/2 cucumber, diced

For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and drained
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
Salt to taste

Directions:

In a bowl, combine olive oil, oregano, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken thighs and coat them well with the marinade. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator for best flavor.

Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing it into strips.

While the chicken is resting, prepare the tzatziki sauce. In a bowl, mix together Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt. Stir until well combined and set aside.

To assemble the gyros, warm the pita breads on the grill or in a skillet for a minute. Layer the sliced chicken, shredded lettuce, diced tomato, and red onion on each pita. Drizzle generously with tzatziki sauce and top with diced cucumber.

Wrap the pita around the filling and serve immediately, enjoying the fresh and vibrant flavors of Greece.
