Blueberry Loaf Recipe
Ingredients:
- 2 cups (250 grams) all-purpose flour
- 1 cup (200 grams) granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (115 grams) unsalted butter, melted
- 1/2 cup (120 milliliters) buttermilk, at room temperature
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup (150 grams) fresh or frozen blueberries
- Zest of 1 lemon (optional) Instructions:
Preheat your oven to 350°F (175°C) and grease a 9×5-inch (23×13 cm) loaf pan. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; the batter should be smooth and slightly thick. Gently fold in the blueberries and lemon zest (if using).

Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
