📝 Ingredients:

🔹 For the Roasted Chicken:

2 boneless, skinless chicken breasts (or thighs)
1 tbsp olive oil
2 cloves garlic, minced
1 tsp fresh thyme (or ½ tsp dried)
½ tsp rosemary, chopped
½ tsp salt
¼ tsp black pepper
½ tsp smoked paprika
🔹 For the Roasted Vegetables:

1 cup baby potatoes, halved
½ cup carrots, chopped
½ cup zucchini, sliced
½ cup broccoli florets
1 tbsp olive oil
½ tsp garlic powder
½ tsp Italian seasoning
Salt & pepper to taste
🍽️ Step by Step:

1️⃣ Marinate & Roast the Chicken:

Preheat oven to 400°F (200°C).
Mix olive oil, garlic, thyme, rosemary, paprika, salt, and pepper.
Rub the seasoning onto the chicken breasts.
Place on a baking sheet and roast for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
Let rest for 5 minutes before slicing.
2️⃣ Prepare the Roasted Vegetables:

Toss baby potatoes, carrots, zucchini, and broccoli with olive oil, garlic powder, Italian seasoning, salt, and pepper.
Spread on a separate baking sheet.
Roast for 25-30 minutes, flipping halfway, until golden and tender.

Plate the sliced roasted chicken with the roasted vegetables.
