Ingredients
For the Cupcakes:
1½ cups all-purpose flour
1 cup granulated sugar
¾ cup mashed ripe peaches (about 2 medium peaches)
2 large eggs
½ cup milk (whole milk or buttermilk works best)
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
1 teaspoon baking powder
¼ teaspoon salt
For the Caramel Frosting:
1 cup heavy cream
1 cup granulated sugar
¼ cup unsalted butter
1 teaspoon vanilla extract
Pinch of salt
Optional Toppings:
Fresh peach slices
Crushed pecans
Drizzle of caramel sauce


Instructions
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
Make the Cupcake Batter:
In a mixing bowl, whisk together the flour, baking powder, and salt.
In another bowl, combine the granulated sugar, mashed peaches, eggs, milk, melted butter, and vanilla extract. Mix until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.


Bake the Cupcakes:
Divide the batter evenly among the prepared cupcake liners, filling each about ⅔ full.
Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool completely in the pan before frosting.
Make the Caramel Frosting:
In a small saucepan over medium heat, combine the heavy cream, sugar, butter, and salt. Stir continuously until the mixture comes to a boil.
Reduce the heat to low and simmer for 2–3 minutes, or until thickened slightly. Remove from heat and let it cool for 10 minutes.
Using a hand mixer or stand mixer, beat the caramel mixture until light and fluffy. If too thick, thin it out with a splash of cream.
Assemble the Cupcakes:
Once the cupcakes are cooled, frost each one generously with the caramel frosting. Top with fresh peach slices, crushed pecans, or a drizzle of caramel sauce if desired.
