📝 Ingredients:

2 large eggs
½ avocado, sliced
1 cup fresh spinach
4-5 cherry tomatoes, halved
4 slices smoked salmon
¼ cup feta cheese, cubed
3-4 black olives
1 tbsp olive oil
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)
🍽️ Step by Step:

1️⃣ Sauté the Spinach:

Heat ½ tbsp olive oil in a pan over medium heat.
Add spinach and cook for 1-2 minutes until wilted.
Season with salt and set aside.
2️⃣ Cook the Eggs:

Heat the remaining olive oil in the pan.
Crack eggs gently and fry until the whites are set but yolks remain runny.
Sprinkle with salt and black pepper.
3️⃣ Prepare the Ingredients:

Slice the avocado and halve the cherry tomatoes.
Cube the feta cheese and arrange it on the plate.
Add smoked salmon slices and olives.
4️⃣ Assemble the Plate:

Place the fried eggs on one side of a plate.
Arrange the avocado, tomatoes, olives, and feta cheese around it.
Add the sautéed spinach and smoked salmon.
5️⃣ Garnish & Serve:

Sprinkle fresh parsley on top for extra flavor.
Serve immediately and enjoy!
