Ingredients :

  • 250 ml of thick sour cream
  • 1 tablespoon of honey (optional)
  • 1 clove of garlic, minced
  • 1 tablespoon of butter
  • 1 pork fillet mignon (approximately 700 g)
  • 150 ml of poultry broth or water
  • 3 tablespoons of old-fashioned mustard
  • 1 teaspoon of sweet paprika
  • 1 tablespoon of vegetable oil
  • Salt and pepper.
  • Fresh parsley for decoration

Instructions :

  1. Prepare the fillet mignon by cutting it into slices about 3-4 cm thick. Heat oil and butter in a skillet over medium heat and brown the meat pieces for 3 minutes on each side. Save them on a plate.
  2. In the same pan, add minced garlic and stir quickly until golden brown. Then incorporate the old-fashioned mustard and poultry broth, mixing well.
  3. Add sour cream, paprika and a pinch of salt and pepper. If you like a sweet note, feel free to incorporate a spoonful of honey to soften the sauce.
  4. Put the filet mignon chunks back in the pan. Cover and let simmer over low heat for 15 minutes, stirring occasionally to allow sauce to coat meat well.
