Ingredients:
- 4 cauliflower-based low-carb tortillas
- 1 cup shredded mozzarella cheese
- 16 slices turkey pepperoni (or regular pepperoni)
- 1/2 cup marinara or pizza sauce
- 1/2 teaspoon dried oregano (or Italian seasoning)
- Olive oil spray (optional, for crispiness)

Directions:
- Preheat the Oven:
Preheat your oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper for easy cleanup. - Assemble the Roll-Ups:
Lay the low-carb tortillas flat on a clean surface. Spread 2 tablespoons of marinara sauce evenly on each tortilla.
Sprinkle ΒΌ cup of shredded mozzarella cheese over the sauce, followed by 4 slices of turkey pepperoni on top. Sprinkle a pinch of dried oregano or Italian seasoning for extra flavor. - Roll & Prepare for Baking:
Carefully roll each tortilla tightly, ensuring the seam is on the bottom when placed on the baking sheet.
Optionally, lightly spray the tops with olive oil to achieve a crispier crust. - Bake:
Place the roll-ups seam-side down on the baking sheet and bake for 10-12 minutes or until the cheese is melted and bubbly, and the tortillas turn golden brown. - Slice and Serve:
