Creamy Garlic Mushroom & Spinach Chicken

Ingredients:

  • 4 boneless, skinless chicken thighs (or breasts)
  • 1 tablespoon avocado oil (or olive oil)
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 cup cremini or button mushrooms, sliced
  • 2 cups fresh baby spinach
  • ¾ cup heavy cream
  • ½ cup vegetable or chicken broth
  • ¼ cup freshly grated Pecorino Romano (or Parmesan) cheese
  • 1 teaspoon dried thyme (or Italian seasoning)
  • Salt and freshly ground black pepper to taste
  • Optional: crispy prosciutto or bacon bits for garnish

Instructions:

  1. Season the Chicken:
  • Season the chicken thighs (or breasts) with salt, pepper, and a pinch of thyme.
  1. Cook the Chicken:
  • Heat avocado oil in a large skillet over medium heat. Cook the chicken for 5-6 minutes per side (depending on thickness) until golden brown and cooked through. Once done, remove the chicken and set aside to rest.
  1. Prepare the Garlic and Mushrooms:
  • In the same skillet, melt the butter over medium heat. Add minced garlic and sliced mushrooms, cooking for 3-4 minutes until fragrant and softened.
  1. Make the Creamy Sauce:
  • Pour in the chicken broth and heavy cream. Stir in the grated Pecorino Romano cheese and thyme, letting the sauce simmer for 4-5 minutes until it thickens slightly.
  1. Add Spinach:
  • Stir in the fresh spinach and cook for another 1-2 minutes until wilted.
  1. Combine the Chicken and Sauce:
  • Return the chicken to the skillet, spooning the creamy sauce over the top. Simmer for an additional 2-3 minutes to allow the flavors to meld together.
  1. Optional Garnish:
  • For a crispy finish, top with pieces of crispy prosciutto or bacon. Serve warm with your favorite sides.
