Bacon Cheeseburger Meatloaf

Ingredients:

  • 1 ½ lbs ground beef
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • ½ cup breadcrumbs
  • ¼ cup ketchup
  • ¼ cup Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 2 eggs, beaten
  • Salt and pepper, to taste

For the Topping:

  • ½ cup ketchup
  • 1 tbsp Dijon mustard
  • 2 tbsp brown sugar

Instructions:

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.

Step 2: Prepare the Meatloaf Mixture
In a large bowl, combine the ground beef, crumbled bacon, shredded cheddar cheese, breadcrumbs, ketchup, mustard, Worcestershire sauce, chopped onion, minced garlic, beaten eggs, salt, and pepper. Mix thoroughly until everything is well combined.

Step 3: Shape the Meatloaf
Transfer the meat mixture into the prepared loaf pan and press it down evenly to form the loaf shape.

Step 4: Make the Topping
In a small bowl, mix together the ketchup, Dijon mustard, and brown sugar. Stir until smooth.

Step 5: Bake the Meatloaf
Spread the topping evenly over the meatloaf. Bake for 1 hour or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).

Step 6: Rest and Slice
Let the meatloaf rest for 10 minutes before slicing it to allow the juices to set.
