Ingredients:
1 tablespoon olive oil
3 tablespoons butter, divided
1 pound cod, seasoned with salt and pepper
1 pound cherry tomatoes, sliced in half
3 cloves garlic, chopped
1 pinch red pepper flakes
3 green onions, sliced, whites and greens divided
1/2 cup chicken broth (or substitute with white wine or dashi)
2 tablespoons lemon juice
Salt and pepper to taste
1 tablespoon parsley, chopped
1 tablespoon basil, chopped
Instructions:


Prepare the Cod:
In a large skillet, heat olive oil and 2 tablespoons butter over medium-high heat. Add the cod, seasoned with salt and pepper, and cook until golden brown and cooked through, about 2-3 minutes per side. Remove cod from the skillet and set aside.
Cook the Tomatoes:
In the same skillet, add the cherry tomatoes and cook until they start to blister and soften, about 3-5 minutes.
Add Aromatics and Deglaze:
Reduce heat to medium. Add garlic, white parts of the green onions, and red pepper flakes. Cook until fragrant, about 1 minute.
Pour in the chicken broth (or chosen liquid), bring to a simmer, and let cook for 3 minutes.
Finish the Sauce:
Stir in lemon juice and remaining 1 tablespoon of butter. Season with salt and pepper to taste.
Combine and Serve:
Return the cod to the skillet. Sprinkle with green onion greens, parsley, and basil. Gently mix to combine and heat through.
Serve the cod hot, ensuring each plate gets a generous helping of the sauce and herbs.
