Cherry Chocolate Ice Cream Cake

Ingredients:

For the Cake:

1 box chocolate cake mix (plus ingredients required on the box)
1 cup cherry pie filling (reserve some for topping)

For the Ice Cream Layer:

1 quart chocolate ice cream (softened)
1 quart cherry ice cream (softened)

For the Topping:

1 cup whipped cream (or Cool Whip)
Chocolate shavings or sprinkles (optional)
Fresh cherries for garnish (optional)

Instructions:

Bake the Chocolate Cake:
Preheat your oven according to the cake mix instructions.
Prepare the chocolate cake mix as directed on the box. Fold in the cherry pie filling gently.
Pour the batter into a greased 9×13 inch baking pan and bake according to package instructions. Allow the cake to cool completely.

Prepare the Ice Cream Layers:
Once the cake is cooled, spread the softened chocolate ice cream evenly over the top of the cake. Place it in the freezer for about 30 minutes to firm up.
BAfter the chocolate ice cream layer is set, spread the softened cherry ice cream on top of the chocolate layer. Return the cake to the freezer for at least 2 hours or until the ice cream is firm.

Add the Topping:
Once the ice cream layers are firm, spread the whipped cream over the top of the cake.
Drizzle with reserved cherry pie filling and sprinkle with chocolate shavings or sprinkles if desired.

Garnish with fresh cherries if you like!
