Ingredients:
1 lb ground chicken
1/4 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 tbsp fresh parsley, chopped (plus extra for garnish)
2 tbsp olive oil for frying
1 egg
1 garlic clove, minced
Salt and pepper, to taste
For the Creamy Ranch Sauce:
1 packet (1 oz) dry ranch seasoning mix
1 1/2 cups chicken broth
2 tbsp butter
1/2 cup heavy cream
1 tbsp all-purpose flour
Salt and pepper, to taste
Instructions:

- Prepare the Meatballs: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, egg, salt, and pepper. Mix everything together until well combined, and then shape the mixture into 1-inch meatballs.
- Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Once hot, add the meatballs to the skillet. Cook for about 6-8 minutes, turning them occasionally to ensure an even golden-brown color all around. Once cooked through, remove the meatballs from the skillet and set them aside.
- Make the Ranch Sauce: In the same skillet, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly to form a roux. Gradually whisk in the chicken broth, continuing to stir until the sauce thickens, which should take about 3-4 minutes.
- Finish the Sauce: Stir in the heavy cream and the dry ranch seasoning mix until the sauce is smooth. Taste and add salt and pepper as needed. Let the sauce simmer for 2-3 minutes until it reaches your preferred thickness.
- Combine and Serve: Return the cooked meatballs to the skillet and gently coat them in the creamy ranch sauce. Let everything simmer together for a couple of minutes to heat up. Serve over mashed potatoes or rice, and sprinkle with extra parsley for a pop of color!
