Sunday Comfort Pot Roast 🍽️🥩🥕🍷

Are you ready to wrap yourself in a warm, tasty embrace? This Sunday Comfort Pot Roast is a heartwarming dish that’s perfect for gatherings or a cozy night in! Let’s dive in and create a meal that will have everyone asking for the recipe! 😋✨

Ingredients:

  • 4-5 red potatoes, quartered
  • 1 cup red wine or additional beef broth
  • 3-4 lb beef chuck roast
  • 2 tbsp tomato paste
  • 4 garlic cloves, minced
  • 2 tbsp Worcestershire sauce
  • 1 large onion, quartered
  • 4 large carrots, peeled and cut into chunks
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 tsp dried rosemary

Instructions:

  1. Season & Sear: First, liberally season the beef chuck roast with salt and pepper on all sides. Heat the olive oil in a large skillet over medium-high heat. Sear the roast until it forms a nice brown crust, about 2-3 minutes on each side. Once lovely and browned, transfer it to your slow cooker.
  2. Add Aromatics & Vegetables: In that same skillet, sauté the quartered onions and minced garlic for about 2-3 minutes until fragrant. Then, surround the roast in the slow cooker with these aromatics, adding the carrot chunks and quartered potatoes around and on top.
  3. Create the Sauce: In a bowl, whisk together the beef broth, red wine (or extra beef broth), tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Pour this savory mixture over the roast and vegetables, ensuring everything is coated nicely.
  4. Cook Low & Slow: Cover your slow cooker and set it to low, cooking for about 8 hours, or on high for 4-5 hours. You want the meat to be tender and falling apart — the longer, the better!
  5. Serve & Enjoy: Once ready, remove the bay leaves from the pot. Shred the roast with forks, serving it alongside the tender vegetables and rich gravy. Enjoy this delightful meal with your loved ones. Bon appétit! 🍽️❤️
