Zucchini & Feta Fritters with Creamy Cucumber Yogurt Dip

Ingredients:

  • 2 zucchinis, grated
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 2 eggs
  • Salt and pepper to taste
  • 1/4 cup olive oil

Creamy Cucumber Yogurt Dip:

  • 1/2 cup Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine grated zucchini, feta cheese, parsley, green onions, garlic, flour, eggs, salt, and pepper. Mix well.
  2. Heat olive oil in a skillet over medium heat.
  3. Scoop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with a spatula. Cook until golden brown, about 3-4 minutes per side.
  4. In a separate bowl, mix together Greek yogurt, grated cucumber, lemon juice, dill, salt, and pepper to make the dip.
  5. Serve the zucchini fritters hot with the creamy cucumber yogurt dip on the side.
