Zucchini & Feta Fritters with Creamy Cucumber Yogurt Dip
Ingredients:
- 2 zucchinis, grated
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 2 eggs
- Salt and pepper to taste
- 1/4 cup olive oil
Creamy Cucumber Yogurt Dip:
- 1/2 cup Greek yogurt
- 1/2 cup grated cucumber
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- Salt and pepper to taste

Directions:
- In a large bowl, combine grated zucchini, feta cheese, parsley, green onions, garlic, flour, eggs, salt, and pepper. Mix well.
- Heat olive oil in a skillet over medium heat.
- Scoop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with a spatula. Cook until golden brown, about 3-4 minutes per side.
- In a separate bowl, mix together Greek yogurt, grated cucumber, lemon juice, dill, salt, and pepper to make the dip.
- Serve the zucchini fritters hot with the creamy cucumber yogurt dip on the side.
