Slow Cooker Corned Beef
Ingredients:
3-4 lb corned beef brisket
1 onion, quartered
3 cloves garlic, smashed
4 cups beef broth
1 tbsp mustard seeds
1 tsp black peppercorns
1 bay leaf
1/2 tsp dried thyme
1 lb baby carrots
1 lb baby potatoes

Preparation:
Place the corned beef in the slow cooker, fat side up. Add onion, garlic, mustard seeds, peppercorns, bay leaf, and thyme.
Pour in beef broth and cover. Cook on low for 8-9 hours, or until the beef is tender.
About 2 hours before serving, add carrots and potatoes to the slow cooker.
Once done, slice the corned beef and serve with the vegetables. Enjoy!
