Lamb Chops over Lobster Mash with Asparagus
Ingredients:
- 4 lamb chops
- 1 lb (450g) potatoes, peeled and cubed
- 1 cup lobster meat, cooked and chopped
- 1 bunch asparagus, trimmed
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: 1/2 cup shrimp or crab meat, cooked
Directions:

- Begin by boiling the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Mash the potatoes with heavy cream, butter, salt, and pepper until smooth. Gently fold in the lobster meat (and shrimp or crab if using).
- Preheat a grill or skillet over medium-high heat. Season lamb chops with salt and pepper. Cook for 3-4 minutes on each side for medium-rare or until desired doneness. Let rest for 5 minutes.
- In a skillet, heat olive oil over medium heat. Add asparagus and season with salt and pepper. Cook, stirring occasionally, until tender-crisp, about 4-5 minutes.
- Serve the lamb chops over a bed of lobster mash and alongside the asparagus.
