Ingredients:
For the Sponge Cake:
4 large eggs (room temperature)
½ cup (100g) granulated sugar
1 teaspoon vanilla extract
½ cup (60g) all-purpose flour, sifted
½ teaspoon baking powder
¼ teaspoon salt
2 tablespoons melted butter
For the Whipped Cream Filling:
1 cup (240ml) heavy whipping cream (cold)
3 tablespoons powdered sugar
½ teaspoon vanilla extract
1 cup fresh strawberries, hulled and chopped
For Decoration:
½ cup whipped cream (extra for topping)

Directions:


Step 1: Make the Sponge Cake
Preheat oven to 350°F (175°C). Line a 10×15-inch baking pan with parchment paper.
In a bowl, beat eggs and sugar for 5-7 minutes until pale, thick, and tripled in volume. This step is key to a light and fluffy sponge!
Gently fold in vanilla, sifted flour, baking powder, and salt. Be careful not to deflate the batter.
Stir in melted butter until just combined.
Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes, until the top is lightly golden and springs back when touched.
Step 2: Roll the Cake
While the cake is still warm, dust a clean kitchen towel with powdered sugar. Carefully flip the cake onto the towel, peel off the parchment paper, and gently roll it with the towel inside. Let it cool completely in this shape—this prevents cracking later.
Step 3: Make the Whipped Cream Filling
In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Fold in the chopped strawberries.
Step 4: Assemble the Swiss Roll
Carefully unroll the cooled sponge cake. Spread the whipped cream filling evenly, leaving a small border at the edges.
Gently roll the cake back up (without the towel), making sure it’s tight but not too firm. Place seam-side down and refrigerate for 30 minutes to set.
Step 5: Decorate & Serve
Spread or pipe extra whipped cream on top and decorate with sliced strawberries. Dust with powdered sugar for a beautiful finish.
