Ingredients
For the Balsamic Marinade/Dressing:
¼ cup balsamic vinegar
¼ cup extra virgin olive oil
1 tbsp Dijon mustard
1 tsp honey
1 garlic clove, minced
¼ tsp salt
¼ tsp black pepper
For the Steak Caprese:

2 lbs flank steak
2 cups cherry tomatoes
1 cup fresh mozzarella, diced
2 tbsp fresh basil, sliced
Instructions
Make the Marinade: Whisk together all marinade ingredients in a bowl.
Marinate the Steak: Coat the steak with half of the marinade and refrigerate overnight.
Grill the Steak: Cook over medium-high heat for 3-5 minutes per side. Let rest for 5 minutes before slicing.
Grill the Tomatoes: Cook tomatoes on the grill or in a hot skillet until blistered, about 3-5 minutes.
Assemble: Slice the steak thinly against the grain, then top with tomatoes, mozzarella, basil, and the remaining marinade. Serve and enjoy!
