Ingredients:
For the Burrito:
1 large flour tortilla 🌮
1 lb (450g) ground beef 🥩
1/2 cup diced onions 🧅
1 clove garlic, minced 🧄
1 cup cooked rice 🍚
1/2 cup black beans (optional) 🫘
1/2 cup shredded cheddar cheese 🧀
1/2 cup shredded Monterey Jack cheese 🧀
1 tbsp taco seasoning 🌶️
2 tbsp tomato paste 🍅
Salt and pepper to taste 🧂
For the Sauce:
1/2 cup enchilada sauce 🌶️
1/2 cup shredded cheese (cheddar or a mix) 🧀
For Garnish:
Fresh cilantro, chopped 🌿
Instructions:

Cook the Beef Filling:
Heat a skillet over medium heat, and cook the ground beef until browned. Drain any excess fat.
Add onions and garlic, cooking until softened.
Stir in taco seasoning, tomato paste, salt, and pepper. Cook for 2-3 minutes.
Mix in cooked rice and black beans (if using), combining well. Set aside.
Assemble the Burrito:
Lay the tortilla flat and place a generous amount of the beef mixture in the center.
Top with shredded cheddar and Monterey Jack cheese.
Fold in the sides and roll the tortilla tightly to form a burrito.
Smother the Burrito:
Preheat your oven to 375°F (190°C).
Place the burrito on a baking dish lined with parchment paper.
Pour enchilada sauce over the burrito and sprinkle with the remaining shredded cheese.
Bake:
Bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove the burrito from the oven, garnish with freshly chopped cilantro, and serve immediately.
