Ingredients
For the Baklava Crust:

6 sheets phyllo dough, thawed
¼ cup unsalted butter, melted
¾ cup finely chopped pistachios
For the Honey Syrup:

½ cup honey
¼ cup water
1 tablespoon lemon juice
½ teaspoon vanilla extract
½ teaspoon cinnamon
Instructions
Step 1: Prepare the Baklava Crust
Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
In a bowl, mix graham cracker crumbs, pistachios, sugar, cinnamon, and melted butter until combined.
Press the mixture into the bottom of the pan. Bake for 8-10 minutes, then let cool.
Step 2: Make the Cheesecake Filling
In a mixing bowl, beat cream cheese, sugar, and honey until smooth.
Add eggs, one at a time, mixing after each. Stir in vanilla, cinnamon, and sour cream.
Pour over the cooled crust and smooth the top.
