Pasta Salad with Spinach, Feta Cheese and Cranberries

🥗 Pasta Salad with Spinach, Feta Cheese and Cranberries 🧀🍒

Ingredients:

  • 200 g short pasta (rigatoni, penne or fusilli)
  • 2 cups of fresh spinach
  • 100 g feta cheese, cubed
  • 1/2 cup dried cranberries
  • 1/3 cup chopped and toasted walnuts
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1 teaspoon of honey
  • 1/2 teaspoon of salt
  • 1/4 teaspoon black pepper black

Instructions:

  1. *Cooking the pasta:
  • Cook the pasta in water with salt according to the instructions on the package.
  • Drain, rinse with cold water and let cool.
  1. *Prepare the Dressing:
  • In a small bowl, mix the olive oil, lemon juice, honey, salt and pepper.
  1. *Mix up the salad:
  • In a large bowl, combine the cold pasta with spinach, feta cheese, dried cranberries and walnuts.
  • Pour the dressing over the salad and mix well.
  1. *Serve and Enjoy:
  • Let it rest for 10 minutes for the flavors to integrate and serve cold.
