🥗 Pasta Salad with Spinach, Feta Cheese and Cranberries 🧀🍒
Ingredients:
- 200 g short pasta (rigatoni, penne or fusilli)
- 2 cups of fresh spinach
- 100 g feta cheese, cubed
- 1/2 cup dried cranberries
- 1/3 cup chopped and toasted walnuts
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of honey
- 1/2 teaspoon of salt
- 1/4 teaspoon black pepper black
Instructions:

- *Cooking the pasta:
- Cook the pasta in water with salt according to the instructions on the package.
- Drain, rinse with cold water and let cool.
- *Prepare the Dressing:
- In a small bowl, mix the olive oil, lemon juice, honey, salt and pepper.
- *Mix up the salad:
- In a large bowl, combine the cold pasta with spinach, feta cheese, dried cranberries and walnuts.
- Pour the dressing over the salad and mix well.
- *Serve and Enjoy:
- Let it rest for 10 minutes for the flavors to integrate and serve cold.
