Ingredients:

For the Donuts:

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk (or milk with 1 teaspoon lemon juice)
1/4 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
Zest of 1 lemon
2 tablespoons lemon juice
3/4 cup fresh or frozen blueberries (if using frozen, do not thaw)

For the Lemon Glaze:
1 cup powdered sugar
2 tablespoons lemon juice
1/2 teaspoon lemon zest
1-2 teaspoons milk (if needed, for consistency)

Directions:

Preheat the Oven

Set your oven to 350°F (175°C). Grease a donut pan with nonstick spray.
Mix Dry Ingredients:

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Mix Wet Ingredients:

In another bowl, whisk together the buttermilk, melted butter, egg, vanilla extract, lemon zest, and lemon juice.

Combine and Fold in Blueberries:
Gently mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
Carefully fold in the blueberries.

Fill the Donut Pan:
Spoon or pipe the batter into the donut molds, filling each about 3/4 full.

Bake:
Bake for 12-15 minutes or until the donuts spring back when touched.
Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Make the Lemon Glaze:
In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest.
If needed, add milk, 1 teaspoon at a time, to reach your desired consistency.

Glaze the Donuts:
Dip each cooled donut into the lemon glaze and place back on the wire rack to set.

Serve and Enjoy:
Enjoy fresh or store in an airtight container for up to 2 days.
