🥔 Garlic Butter Salmon with Roasted Veggies 🥦

A wholesome and flavorful one-pan meal that’s easy and delicious!

📝 Ingredients:

2 salmon fillets
2 cups baby potatoes, halved
1 cup cherry tomatoes
1 cup broccoli florets
2 tbsp olive oil
3 tbsp butter, melted
3 cloves garlic, minced
1 tbsp Dijon mustard
1 tsp honey
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 tbsp fresh parsley, chopped
1 lemon, cut into wedges
🍽️ Directions:

1️⃣ Roast the Potatoes:

Preheat oven to 400°F (200°C).
Toss baby potatoes with 1 tbsp olive oil, 1 clove garlic, salt, and pepper.
Spread on a baking sheet and roast for 15 minutes.
2️⃣ Prepare the Garlic Butter Sauce:

Mix melted butter, Dijon mustard, honey, Italian seasoning, garlic, paprika, salt, and pepper.
3️⃣ Add Salmon & Veggies:

Push potatoes to one side of the baking sheet.
Add salmon, cherry tomatoes, and broccoli.
Drizzle salmon with the garlic butter sauce.
Toss veggies with remaining olive oil, salt, and pepper.
4️⃣ Bake to Perfection:

Bake for 12-15 minutes until salmon flakes easily and veggies are tender.
Broil for an additional 2 minutes for a golden finish.
5️⃣ Serve & Enjoy:

Garnish with fresh parsley and serve with lemon wedges.
