Greek Chicken Bites

Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp red wine vinegar
2 cloves garlic, minced
1 tsp dried oregano
½ tsp ground cumin
½ tsp paprika
¼ tsp salt
¼ tsp black pepper
¼ cup crumbled feta cheese (for garnish)
2 tbsp fresh parsley, chopped (for garnish)
Directions:


In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, cumin, paprika, salt, and black pepper.
Add the chicken pieces to the marinade and toss to coat evenly. Let sit for at least 15 minutes, or refrigerate for up to 2 hours for deeper flavor.
Heat a large skillet over medium heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked and golden brown.
Remove from heat and sprinkle with crumbled feta and fresh parsley.
Serve warm with pita, tzatziki, or over a salad. Enjoy!
