Peanut Butter Cherry Explosion Cake
Ingredients:
For the Cake:

For the Peanut Butter Filling:

For the Cherry Filling:
π 2 cups fresh or canned cherries, pitted and halved

π 1 tablespoon lemon juice
π₯ 1 teaspoon cornstarch (optional, for thickening)
For the Chocolate Drizzle:
π« Β½ cup dark chocolate chips
π₯ ΒΌ cup heavy cream
For the Whipped Cream Topping:
π₯ 1 cup heavy whipping cream
π¬ ΒΌ cup powdered sugar
π₯ 1 teaspoon vanilla extract
Directions:

Prepare the Cake: Preheat oven to 350Β°F (175Β°C). Grease and line three 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add eggs, buttermilk, coffee, vegetable oil, and vanilla. Mix until smooth.
Divide the batter evenly among the prepared cake pans and bake for 30-35 minutes. Let cakes cool completely.
Make the Peanut Butter Filling: In a bowl, beat peanut butter, powdered sugar, heavy cream, and butter until light and fluffy. Set aside.
Prepare the Cherry Filling: In a saucepan over medium heat, combine cherries, sugar, and lemon juice. Cook until cherries soften and release juices. If needed, stir in cornstarch to thicken. Let cool.
Make the Chocolate Drizzle: Heat heavy cream in a small saucepan until just simmering. Remove from heat and pour over chocolate chips. Stir until smooth.
Whip the Cream: Beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of peanut butter filling, then a layer of cherry filling. Repeat with the second layer.
Place the final cake layer on top and cover the entire cake with whipped cream. Drizzle with chocolate and garnish with whole cherries.
