Ingredients:
2 1/2 cups all-purpose flour
2 cups granulated sugar
1/2 cup unsalted butter, softened
1 cup whole milk
3 large eggs
1 tablespoon baking powder
1/2 teaspoon salt
1 cup pink dragon fruit puree
1 teaspoon vanilla extract
1/2 cup vegetable oil
1 cup unsalted butter, softened (for frosting)
4 cups powdered sugar (for frosting)
2 tablespoons heavy cream (for frosting)

1 teaspoon vanilla extract (for frosting)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans for easy release.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  3. Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Gently fold in the pink dragon fruit puree and vanilla extract until combined.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, alternating with the whole milk, until everything is nicely blended.
  6. Divide the batter evenly among the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes, then carefully transfer them to wire racks to cool completely.
  9. For the frosting, beat together the softened butter, powdered sugar, heavy cream, pink dragon fruit puree, and vanilla extract until you achieve a smooth and fluffy consistency.
  10. Once the cakes have cooled, spread the frosting between the layers and on the top and sides of the cake.
