Pink Dragon Fruit Layer Cake 😋🤩
Ingredients:
2 1/2 cups all-purpose flour
2 cups granulated sugar
1/2 cup unsalted butter, softened
1 cup whole milk
3 large eggs
1 tablespoon baking powder
1/2 teaspoon salt
1 cup pink dragon fruit puree
1 teaspoon vanilla extract
1/2 cup vegetable oil
1 cup unsalted butter, softened (for frosting)
4 cups powdered sugar (for frosting)
2 tablespoons heavy cream (for frosting)
1/2 cup pink dragon fruit puree (for frosting)
1 teaspoon vanilla extract (for frosting)
Directions:

- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans for easy release.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Gently fold in the pink dragon fruit puree and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, alternating with the whole milk, until everything is nicely blended.
- Divide the batter evenly among the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then carefully transfer them to wire racks to cool completely.
- For the frosting, beat together the softened butter, powdered sugar, heavy cream, pink dragon fruit puree, and vanilla extract until you achieve a smooth and fluffy consistency.
- Once the cakes have cooled, spread the frosting between the layers and on the top and sides of the cake.
- Decorate as you desire and serve this stunning cake to your family and friends!
