🍦 Rum Raisin Ice Cream 🥃🍇
A creamy, rich ice cream flavored with dark rum and packed with plump raisins—perfect for a decadent, grown-up treat!
📝 Ingredients:
1 ½ cups heavy cream
1 cup whole milk
¾ cup granulated sugar
4 large egg yolks
2 tbsp dark rum
1 ½ cups raisins
2 tbsp dark rum (for soaking raisins)
1 tsp vanilla extract
🔥 Instructions:

1️⃣ In a small bowl, combine the raisins with 2 tablespoons of dark rum. Let them soak for at least 1 hour to plump up.
2️⃣ In a saucepan, combine heavy cream, whole milk, and sugar. Heat over medium heat, stirring constantly, until the sugar has dissolved and the mixture is warm but not boiling.
3️⃣ In a separate bowl, whisk the egg yolks until smooth. Gradually add a little of the warm milk mixture to the egg yolks while whisking constantly to temper them.
4️⃣ Slowly pour the egg mixture back into the saucepan, whisking continuously. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes).
5️⃣ Remove the mixture from the heat and stir in the vanilla extract and dark rum. Let the mixture cool to room temperature.
6️⃣ Pour the cooled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
7️⃣ When the ice cream has thickened, fold in the soaked raisins.
8️⃣ Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
