📝 Ingredients:

For the Shredded Chicken:

2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1/2 cup chicken broth
For the Roasted Potatoes:

3 medium Yukon gold potatoes, chopped
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
For the Fresh Salad:

2 cups mixed greens
1/2 cup cherry tomatoes, halved
1/2 cup steamed broccoli
1 tbsp balsamic vinaigrette (or dressing of choice)
🍽️ Directions:

1️⃣ Cook the Chicken:

In a pan, heat olive oil over medium heat.
Add chicken, season with garlic powder, salt, pepper, and Italian seasoning.
Pour in chicken broth, cover, and let simmer for 15-20 minutes until cooked through.
Shred the chicken using two forks.
2️⃣ Roast the Potatoes:

Preheat oven to 400°F (200°C).
Toss chopped potatoes with olive oil, garlic powder, salt, black pepper, and paprika.
Spread evenly on a baking sheet and roast for 25-30 minutes until golden and crispy.
3️⃣ Prepare the Salad:

In a bowl, combine mixed greens, cherry tomatoes, and steamed broccoli.
Drizzle with balsamic vinaigrette and toss lightly.
