Best Fluffy Pancakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons melted butter (plus more for cooking)
- 1 teaspoon vanilla extract
Directions:

- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined (a few lumps are okay). Do not overmix!
- Heat a non-stick pan or griddle over medium heat and lightly grease with butter.
- Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, greasing the pan as needed.
- Serve warm with syrup, fresh fruit, or your favorite toppings!
