Mandarin Orange Pound Cake

Ingredients:

For the Cake:
250 g all-purpose flour
2 tsp baking powder
1/4 tsp salt
200 g granulated sugar
120 g unsalted butter, softened
3 large eggs
120 ml freshly squeezed mandarin orange juice
1 tbsp mandarin orange zest
100 ml whole milk
1 tsp vanilla extract
For the Glaze:
150 g powdered sugar
2-3 tbsp mandarin orange juice
1 tsp mandarin zest (optional)
Optional Garnish:
Fresh mandarin slices
Orange zest curls

Directions:

Preheat the oven to 175°C. Grease and flour a 23 cm loaf pan or line it with parchment paper.
In a bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, mandarin juice, and zest.
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Prepare the glaze: In a bowl, mix the powdered sugar and mandarin juice until smooth. Add more juice if needed for a thinner consistency. Drizzle the glaze over the cooled cake and garnish with mandarin slices or zest.
