Baileys Strawberries & Cream Cheesecake

Ingredients:

For the crust:

1 ½ cups digestive biscuit crumbs

½ cup melted butter

2 tbsp brown sugar

For the filling:

3 (8 oz) packages cream cheese, softened

1 cup powdered sugar

½ cup Baileys Irish Cream

1 tsp vanilla extract

3 large eggs

1 cup heavy cream

½ cup sour cream

For the topping:

2 cups fresh strawberries, sliced

2 tbsp sugar

¼ cup Baileys Irish Cream

Instructions:

Preheat oven to 325°F (165°C).

For the crust: Mix digestive biscuit crumbs, melted butter, and brown sugar. Press mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes and let cool.
