Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts, cut into strips
2 tbsp olive oil
1 tbsp lemon juice
1 tsp garlic powder
1 tsp oregano
1/2 tsp salt
1/2 tsp black pepper
For the Bowl:
1 cup cooked quinoa or brown rice
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 cup red onion, thinly sliced
1/4 cup kalamata olives, sliced
1/4 cup feta cheese, crumbled
1 tbsp fresh parsley, chopped
For the Greek Dressing:
3 tbsp olive oil
1 tbsp lemon juice
1 tsp red wine vinegar
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp salt
1/4 tsp black pepper
Directions:

Step 1: Cook the Chicken
In a bowl, mix olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
Add chicken strips, toss to coat, and marinate for 15 minutes.
Heat a pan over medium heat and cook chicken for 5-7 minutes per side until golden and cooked through.
Step 2: Make the Dressing
