Lotus Cheesecake

Ingredients:

For the biscuit layer:

  • 25 pieces of Lotus biscuit
  • 1/2 cup melted butter

For the cheesecake layer:

  • 400g Kiri spread cheese
  • 1 cup liquid whipping cream
  • 3 tablespoons powdered sugar
  • 3 tablespoons Lotus butter

For the final layer:

  • 1/2 cup Lotus butter

Instructions:

For the biscuit layer:

Crush the biscuits in a blender and mix with melted butter until well combined. Press the mixture into a cheesecake pan and freeze until the cheesecake layer is ready.

For the cheesecake layer:

Beat the whipping cream until stiff peaks form. In a separate bowl, mix the Kiri cheese, powdered sugar, and Lotus butter until smooth. Add the whipped cream and mix until well combined. Pour the cheesecake mixture over the biscuit layer and refrigerate for at least 4-5 hours.

For the final layer:

Melt the Lotus butter and pour over the cheesecake layer. If the butter is not melted, heat it in the microwave for 30 seconds. Sprinkle crushed Lotus biscuits around the edges and serve. Enjoy!
