This fun and delicious cake combines cookie dough, ice cream, and M&M’s for a festive treat that everyone will love! 🎉
Ingredients:
- 1 cup M&M’s (or more, to taste)
- 3/4 cup brown sugar, packed
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup semisweet chocolate chips (or chopped chocolate)
- 1/2 gallon chocolate ice cream (or your favorite flavor), softened
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 gallon vanilla ice cream (or your favorite flavor), softened
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 cup heavy cream
- 1/2 cup mini chocolate chips
Instructions:

- Begin by preparing the cookie dough layer. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the vanilla extract and mix until well combined.
- Gradually stir in the flour and salt, mixing until a dough forms. Fold in the mini chocolate chips and set aside.
- In an 8 or 9-inch springform pan, press half of the cookie dough mixture evenly into the bottom to form a crust.
- Layer the softened vanilla ice cream on top of the cookie dough layer, smoothing it out.
- Add a layer of M&M’s over the vanilla ice cream, then top with the softened chocolate ice cream, smoothing it out once more.
- Press the remaining cookie dough on top of the chocolate ice cream layer. Cover the cake with plastic wrap and freeze for at least 4 hours or overnight for best results.
- For the chocolate ganache, heat the heavy cream in a saucepan over medium heat until it starts to simmer. Remove it from the heat and add the chocolate chips. Stir until smooth and shiny.
- Once the cake is firm, remove it from the freezer, and pour the chocolate ganache over the top, allowing it to drip down the sides.
- Decorate with additional M&M’s on top, then return the cake to the freezer for another 30 minutes to set.
- Slice and serve – enjoy your delicious treat!
