Chocolate M&M’s & Cookie Dough Ice Cream Cake (with Vanilla & Cookies n’ Cream Ice Cream)

This fun and delicious cake combines cookie dough, ice cream, and M&M’s for a festive treat that everyone will love! 🎉

Ingredients:

  • 1 cup M&M’s (or more, to taste)
  • 3/4 cup brown sugar, packed
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup semisweet chocolate chips (or chopped chocolate)
  • 1/2 gallon chocolate ice cream (or your favorite flavor), softened
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 gallon vanilla ice cream (or your favorite flavor), softened
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup mini chocolate chips

Instructions:

  1. Begin by preparing the cookie dough layer. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the vanilla extract and mix until well combined.
  2. Gradually stir in the flour and salt, mixing until a dough forms. Fold in the mini chocolate chips and set aside.
  3. In an 8 or 9-inch springform pan, press half of the cookie dough mixture evenly into the bottom to form a crust.
  4. Layer the softened vanilla ice cream on top of the cookie dough layer, smoothing it out.
  5. Add a layer of M&M’s over the vanilla ice cream, then top with the softened chocolate ice cream, smoothing it out once more.
  6. Press the remaining cookie dough on top of the chocolate ice cream layer. Cover the cake with plastic wrap and freeze for at least 4 hours or overnight for best results.
  7. For the chocolate ganache, heat the heavy cream in a saucepan over medium heat until it starts to simmer. Remove it from the heat and add the chocolate chips. Stir until smooth and shiny.
  8. Once the cake is firm, remove it from the freezer, and pour the chocolate ganache over the top, allowing it to drip down the sides.
  9. Decorate with additional M&M’s on top, then return the cake to the freezer for another 30 minutes to set.
  10. Slice and serve – enjoy your delicious treat!
