Honey Garlic Salmon with Roasted Potatoes & Asparagus

Ingredients:
For the Salmon:

2 salmon fillets (about 6 oz each)
2 tbsp honey
2 tbsp soy sauce
2 cloves garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
1/2 tsp paprika
Salt & black pepper, to taste
For the Roasted Potatoes:

2 cups baby potatoes, halved
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
Salt & black pepper, to taste
For the Asparagus:

1 bunch asparagus, trimmed
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp lemon zest (optional)
Directions:
Step 1: Roast the Potatoes
Preheat your oven to 400°F (200°C).
Toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper.
Spread on a baking sheet and roast for 20 minutes.

Step 2: Prepare the Honey Garlic Salmon
In a small bowl, whisk together honey, soy sauce, minced garlic, lemon juice, olive oil, paprika, salt, and black pepper.
Place the salmon fillets in the mixture and let them marinate while the potatoes roast.

Step 3: Add Asparagus & Bake
Push the potatoes to one side of the baking sheet and add the asparagus. Toss the asparagus with olive oil, salt, and black pepper.
Place the marinated salmon fillets on the sheet and drizzle some of the extra marinade on top.

Step 4: Bake Everything Together
Bake for an additional 12-15 minutes, or until the salmon flakes easily with a fork.
For extra caramelization, broil for 2 minutes at the end.

Step 5: Serve & Enjoy!
Plate the salmon with roasted potatoes and asparagus. Drizzle any extra pan juices over the top and enjoy!
