Irish Sausage & Cabbage Stew


A comforting, hearty stew packed with savory flavors!

📝 Ingredients:

6 pork sausages (Irish or bratwurst)
1 tbsp olive oil
1 onion (sliced)
3 cloves garlic (minced)
3 carrots (cut into large chunks)
3 cups green cabbage (chopped)
3 cups beef or chicken broth
1/2 cup dark beer (optional, for depth of flavor)
1 tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
2 bay leaves
1 tbsp fresh parsley (for garnish)
🍽️ Directions:

1️⃣ Brown the Sausages:

Heat olive oil in a large pot over medium heat.
Sear the sausages for 3-4 minutes per side until browned.
Remove and set aside.
2️⃣ Sauté the Vegetables:

In the same pot, sauté onions and garlic for 2 minutes until fragrant.
Add carrots and cabbage, stirring for 3 more minutes.
3️⃣ Simmer the Stew:

Pour in broth, beer (if using), Worcestershire sauce, salt, black pepper, thyme, and bay leaves.
Return the sausages to the pot and bring to a boil.
Reduce heat, cover, and let simmer for 30-40 minutes until veggies are tender.
4️⃣ Serve & Enjoy:

Remove bay leaves and garnish with fresh parsley.
Serve hot with crusty bread or mashed potatoes!
