Steak with Creamy Mushroom Sauce & Asparagus

Ingredients:
For the steak:

  • 2 sirloin or ribeye steaks
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

For the creamy mushroom sauce:

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 cup mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
  • 1 teaspoon fresh parsley, chopped

For the asparagus:

  • 1 bunch asparagus, ends trimmed
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Directions:

  1. Preheat a skillet over medium-high heat. Rub steaks with olive oil, salt, pepper, and garlic powder.
  2. Sear the steaks in the skillet for 3-4 minutes per side, or until your preferred doneness. Remove and let rest.
  3. In the same skillet, add olive oil and butter. Sauté mushrooms until tender, about 5 minutes.
  4. Add garlic and cook for 1 minute. Stir in heavy cream, Dijon mustard, soy sauce, salt, and pepper. Simmer for 2-3 minutes until thickened.
  5. Drizzle olive oil over the asparagus, season with salt and pepper, and grill or pan-roast until tender, about 5 minutes.
  6. Serve the steaks topped with the creamy mushroom sauce and a side of asparagus. Garnish with parsley.
