Ingredients:
4 chicken breasts
4 tbsp honey
3 tbsp Dijon mustard
2 garlic cloves, minced
500g asparagus
4 medium potatoes
3 tbsp olive oil
150g grated cheese (mozzarella or cheddar)
🧂 Salt – to taste
🧂 Pepper – to taste
Instructions:

Prepare the potatoes:
Preheat the oven to 200°C (390°F). Wash, peel, and cut the potatoes into cubes. Place them on a baking tray, drizzle with 2 tablespoons of olive oil, add salt and pepper to taste. Mix well and bake for 25–30 minutes, or until golden and tender.
Prepare the chicken:
In a bowl, mix the honey, Dijon mustard, and minced garlic. Add salt and pepper to taste. Place the chicken breasts on a baking tray and pour the honey mustard mixture over them, making sure to coat each piece evenly.
Roast the asparagus:
Wash the asparagus and trim off the tough ends. Place them on a separate baking tray, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat well.
Bake the chicken and asparagus:
Once the potatoes have been in the oven for 15 minutes, add the trays with the chicken and asparagus. Bake everything together for 20–25 minutes, or until the chicken is fully cooked (internal temperature should reach 75°C or 165°F) and the asparagus is tender.
Add the cheese:
During the last 5 minutes of baking, sprinkle the grated cheese over the asparagus so it melts perfectly.
Serve:
Once everything is cooked, remove from the oven. Serve the chicken breasts topped with honey mustard sauce, alongside the cheesy roasted asparagus and golden potatoes. Enjoy this flavorful and colorful dish!
