Magical and Easy Rainbow Pie

Ingredients:

For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted

For the Filling:
1 (14 oz) can sweetened condensed milk
1/2 cup fresh lemon juice
1 tsp vanilla extract
1 1/2 cups heavy cream, chilled
6-8 drops food coloring (red, orange, yellow, green, blue, purple)

For the Topping:
1/2 cup whipped cream
Rainbow sprinkles

Directions:

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch pie dish. Bake for 10 mins. Let cool.
  2. In a bowl, whisk sweetened condensed milk, lemon juice, and vanilla until smooth.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the condensed milk mixture.
  4. Divide the filling into 6 bowls. Add a few drops of food coloring to each bowl to create red, orange, yellow, green, blue, and purple layers.
  5. Spoon each colored layer into the crust, starting with purple and ending with red. Use a knife to gently swirl the colors.
  6. Chill for 4+ hours or until set. Top with whipped cream and rainbow sprinkles before serving.
